Sprouts Dhokla

Sprouts Dhokla is a healthy and flavorful twist on the traditional dhokla, incorporating the goodness of mixed sprouts. This steamed savory cake combines the nutrient-dense sprouts with semolina, besan, and curd, creating a light and fluffy texture. The tempering of mustard seeds, sesame seeds, and asafoetida adds a delightful crunch and aromatic flavor. Garnished with fresh coriander and a squeeze of lemon juice, this dhokla is perfect as a snack or a light meal, offering a balanced mix of protein, fiber, and flavor.
For a Serving Size of Two:
Ingredients:
- 60 grams mixed sprouts (e.g., moong, chana)
- 30 grams semolina
- 20 grams besan
- 100 ml curd
- 1/2 teaspoon ginger paste
- 1/2 teaspoon green chili paste
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon eno fruit salt
- 1/4 teaspoon mustard seeds
- 1/4 teaspoon sesame seeds
- A pinch of hing
- 1 teaspoon oil
- Salt to taste
- Fresh coriander leaves, chopped
- Lemon juice
Procedure:
- Blend the mixed sprouts into a coarse paste using a little water if needed.
- In a mixing bowl, combine the sprouts paste, semolina, besan, curd, ginger paste, green chili paste, turmeric powder, and salt. Mix well to form a smooth batter.
- Let the batter rest for 10-15 minutes to allow the semolina to absorb moisture.
- Preheat the steamer or a large pot with water for steaming. Just before steaming, add the eno fruit salt or baking soda to the batter and mix gently.
- Pour the batter into a greased dhokla tray or a plate that fits into your steamer. Steam the batter for about 15-20 minutes or until a toothpick inserted into the center comes out clean.
- In a small pan, heat oil and add mustard seeds. Let them splutter. Add sesame seeds and asafoetida. Sauté for a few seconds. Pour the tempering over the steamed dhokla.
- Cut the dhokla into squares and garnish with chopped coriander leaves and a squeeze of lemon juice if desired. Serve with green chutney.
