Sticky Pomegranate Chicken

Sticky Pomegranate Chicken is a delicious and vibrant dish that features tender chicken glazed with a sweet and tangy pomegranate sauce. The combination of flavors makes it a perfect choice for a delightful dinner, balancing savory, sweet, and tart notes beautifully.
For a Serving Size of Two:
Ingredients:
- 2 chicken breasts (about 300 grams), boneless and skinless
- 1/4 cup pomegranate juice (60 ml)
- 2 tablespoons honey (or maple syrup for a vegan option)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon apple cider vinegar
- 1 garlic clove, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup pomegranate seeds for garnish
- Fresh parsley or cilantro for garnish (optional)
Procedure:
- In a bowl, combine pomegranate juice, honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, and black pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Heat olive oil in a skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a golden-brown exterior.
- Once the chicken is cooked, add the reserved marinade to the skillet. Bring it to a simmer and cook for about 3-4 minutes, allowing the sauce to thicken and become sticky. Ensure the chicken is coated in the sauce.
- Slice the chicken and serve it drizzled with the sticky pomegranate sauce. Garnish with pomegranate seeds and fresh parsley or cilantro if desired.
