Super Seed Crunchy Bars

These Super Seed Crunchy Bars are a nutritious and delicious snack perfect for on-the-go energy. Packed with rolled oats, mixed nuts, and seeds, they provide a satisfying crunch and a wholesome combination of healthy fats, protein, and fiber. Sweetened naturally with dates and enriched with nut butter, these bars are a healthy alternative to store-bought snacks.
For a Serving Size of Two:
Ingredients:
- 40 grams rolled oats
- 20 grams mixed nuts (chopped, e.g., almonds, walnuts, cashews)
- 20 grams mixed seeds (e.g., pumpkin seeds, sunflower seeds, flaxseeds)
- 2 tablespoons nut butter (e.g., almond or peanut butter)
- 1 tablespoon chopped dates
- 1 teaspoon unsweetened cocoa powder (optional)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
Procedure:
- In a mixing bowl, combine the rolled oats, chopped mixed nuts, mixed seeds, chopped dates, cocoa powder (if using), ground cinnamon. Mix well.
- In a separate bowl, gently heat the nut butter and vanilla extract until melted and smooth. This can be done in the microwave for about 20-30 seconds or in a small saucepan over low heat.
- Pour the melted nut butter mixture over the dry ingredients and mix thoroughly until everything is well combined.
- Line a small baking dish (about 8×4 inches) with parchment paper. Press the mixture firmly into the bottom of the dish to form an even layer.
- Refrigerate for at least 1 hour to set. Once firm, remove from the dish and cut into bars or squares.
