Baked Potato Vada

Baked Potato Vada is a healthier twist on the traditional fried potato vada, retaining the delicious flavors and textures without the excess oil. The combination of mashed potatoes and green peas, flavored with spices and fresh herbs, makes for a comforting and satisfying snack. These vadas are perfectly crisp on the outside and soft on the inside, making them an ideal accompaniment to tea or as a party appetizer.
For a Serving Size of Two:
Ingredients:
- 200 grams boiled and peeled potatoes
- 50 grams boiled and mashed green peas
- 1 teaspoon grated ginger
- 1 finely chopped green chili
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon salt
- 2 tablespoons chopped coriander
- 1 tablespoon lemon juice
- 50 grams whole wheat flour
- 1 teaspoon oil (for greasing)
Procedure:
- In a mixing bowl, mash the boiled potatoes and green peas. Add ginger, green chili, cumin seeds, turmeric powder, red chili powder, garam masala, salt, coriander, and lemon juice. Mix thoroughly until well combined.
- Divide the potato mixture into equal portions and shape each portion into small balls or patties.
- Preheat your oven to 200°C (392°F).
- Roll each vada in whole wheat flour to coat them lightly.
- Place the coated vadas on a baking tray lined with parchment paper. Lightly brush or spray the tops with oil. Bake for 20-25 minutes or until golden brown and crisp, flipping halfway through.
- Serve hot with green chutney.
