QUINOA BEAN CUTLETS

INGREDIENTS
Quinoa – 1/2 cup cooked
Black Beans/black turtle beans – 1/4 cup cooked
Potato – 1 small size boiled
Oats flour – 1/4 cup
Carrot – 1/3 cup grated finely
Oil – 2 tsp
Onion – 1 finely chopped
Ginger-garlic paste – 1/4 tsp
Chilli powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Salt to taste
Oil for pan frying the patties (or air fry)
METHOD
If using dried beans, soak them overnight before cooking them under pressure until tender. Drain, mash, and set aside the water.
Onions are cooked in 2 teaspoons of hot oil until they are translucent. Add the ginger and garlic paste and continue to cook for a few minutes. Add the necessary salt, cumin powder, and chilli powder, and simmer for a further few minutes. Take it off the stove and let it cool.
In a bowl, mix together cooked quinoa, cooked and mashed black beans. Add the sautéed onions, mashed potatoes, shredded carrot, and oat powder and combine thoroughly.
Add salt and any seasoning of your choice. Combine the above mixture to create a dough. Equally divide the mixture, then form it into smooth balls. Then, like in the illustration below, flatten the balls to create patties. You can pan fry or air fry them as well.
The patties should be fried on a tawa over low heat until golden brown on both sides, using minimum oil per patty or air fry them.
It is best served hot with green chutney.
