Sweet Potato and Lentil Power Bite

For a Serving Size of Two:
Ingredients:
- 200 grams peeled and cubed sweet potato
- 80 grams cooked lentils (red or green)
- 50 grams finely chopped onion
- 30 grams finely chopped bell pepper
- 2 teaspoons minced garlic
- 2 teaspoons minced ginger
- 1 teaspoon ground cumin
- 1 teaspoon paprika or chili powder
- Salt (to taste)
- 1 teaspoon black pepper (to taste)
- 1 tablespoon fresh coriander leaves, chopped
- 2 teaspoons olive oil for cooking
- 30 grams whole wheat flour
- 20 grams oats, ground into flour
Procedure:
- Boil or steam the sweet potato cubes until tender (about 10-15 minutes). Drain and let them cool slightly.
- In a mixing bowl, mash the cooked sweet potatoes with a fork or potato masher. Add the cooked lentils, chopped onion, bell pepper, minced garlic, and ginger. Mix until well combined.
- Stir in the ground cumin, paprika, salt, black pepper, chopped coriander, and whole wheat flour. If using ground oats for extra texture, add them now. Mix until the mixture holds together.
- Form the mixture into small balls or patties (about the size of a golf ball).
- Heat olive oil in a skillet over medium heat. Add the bites in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Remove from the skillet and drain on paper towels. Serve warm with a dip of your choice, like yogurt or a spicy sauce.
