Sweet Potato Chickpeas Soup

A super comforting soup recipe that wards away the blues with a rich sweet flavour that’s offset by a squeeze of lemon and a few twists of black pepper supplemented onto each person’s soup bowl at the table.

Chickpeas are high in protein and make an excellent replacement for meat in vegetarian and vegan diets. As a rich source of vitamins, minerals and fibre, they offer a variety of health benefits. Sweet Potato is an excellent source of beta carotene, vitamin C, fibre and potassium.
Ingredients:
- 20 grams onion
- 20 grams chickpeas
- 20 grams sweet potato, peeled and cubed
- 50 ml vegetable stock
- 1 garlic clove
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- 1 teaspoon oil
- ½ teaspoon lemon juice
- Salt and pepper to taste

Method:
- Heat oil and add onion, garlic, cumin and coriander and cook until tender.
- Then add sweet potato and fry for 2 min. Pour in the vegetable stock and boil for 10 mins
- Later add the drained chickpeas and heatthe mixture.
- Puree mixture in the blender until smooth.
- Add this mixture to the pan and adjust the consistency with extra water if needed, then heat until boiling.
- Add a drizzle of lemon juiceand a couple of grinds of black pepper and stir well.
- Serve hot and warm.
