For a Serving Size of Two:
Ingredients:
For the Pie Crust:
- 100 grams whole wheat flour
- 30 grams oat flour
- 1 tablespoon coconut oil
- 1/4 teaspoon salt
- 2-3 tablespoons cold water
For the Filling:
- 200 grams cooked sweet potato (mashed)
- 100 grams cooked yellow dhal (split pigeon peas)
- 50 grams finely chopped onion
- 1 garlic clove, minced
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon garam masala
- 1/2 teaspoon chili powder
- Salt to taste
- 2 tablespoons chopped fresh cilantro (optional)
Procedure:
- In a bowl, mix whole wheat flour, oat flour, and salt. Cut in the coconut oil until the mixture resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes. - Heat a small amount of oil in a pan over medium heat. Add cumin seeds and allow to sizzle.
- Add chopped onion and garlic, and sauté until translucent. Add turmeric powder, ground coriander, garam masala, and chili powder. Stir for a minute to release the flavors.
- Add mashed sweet potato and cooked dhal. Mix well and cook for another 5-7 minutes, allowing the flavors to meld. Season with salt and stir in fresh cilantro if using. Let the filling cool.
- Preheat the oven to 180°C (350°F).
- Roll out the chilled dough on a lightly floured surface. Cut into circles or squares, depending on your pie mold size.
- Place the dough in the pie molds or a muffin tin, pressing it gently to fit the shape.
Spoon the sweet potato dhal filling into each pie crust, smoothing the tops. - Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the filling is heated through.
- Let the pies cool slightly before removing from the molds. Serve warm or at room temperature.
