Sweet Potato Risotto

Sweet Potato Risotto is a creamy, flavorful dish combining the rich taste of roasted sweet potatoes with the classic creaminess of Arborio rice. Enhanced with aromatic garlic, red onions, and fresh coriander, this risotto is finished with a touch of ricotta cheese for added richness. It’s a nutritious meal offering a balance of vitamins, fiber, protein, and healthy fats, perfect for a wholesome and satisfying dining experience.
For a Serving Size of Two:
Ingredients:
- 250 grams peeled sweet potato and cut into ¼ inch dice
- 60 grams chopped red onions
- 1 teaspoon minced garlic
- 60 grams Arborio rice
- 250 ml vegetable stock
- 2 tablespoons ricotta cheese, fine piece
- ½ tablespoon chopped fresh coriander
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Procedure:
- Preheat the oven to 425°F (220°C).
- In a small baking pan place diced potato, onions, ½ tablespoons of the oil, garlic, salt and pepper. Mix around and bake for 10 minutes. Flip mixture and bake for another 10 minutes.
- While the potato is cooking, in a medium pot, add the remaining ½ tablespoon of oil and heat over medium high.
- Add rice and cook, moving rice around for 2-3 minutes, but do not brown.
- Reduce heat to medium low. Begin adding stock one quarter cup at a time, waiting until each addition evaporates before adding the next. Do not let rice get completely dry before adding each quarter cup.
- Once the sweet potato is cooked, add to rice (at any stage of cooking) and continue cooking rice until all of the stock is gone and rice is cooked but not mushy.
- Remove from heat and stir in ricotta cheese and coriander. Cover and let sit for 3-5 minutes until the rice is fully cooked and the texture is creamy.
- Adjust seasoning and serve.
