Sweet Potato Tortilla

For a Serving Size of Two:
Ingredients:
- 150 grams peeled and grated sweet potato
- 50 grams chickpea flour (besan)
- 30 grams finely chopped spinach
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon olive oil (for cooking)
- Water as needed to make a batter (approximately 100-150 ml)
Procedure:
- In a mixing bowl, combine the chickpea flour, cumin seeds, turmeric powder, red chili powder, black pepper, and salt.
- Gradually add water to the dry ingredients, mixing continuously to form a smooth, lump-free batter.
- Add the grated sweet potato and chopped spinach to the batter, mixing well to ensure everything is evenly coated.
- Heat a non-stick skillet or frying pan over medium heat and add a small amount of olive oil.
- Pour a portion of the batter onto the skillet, spreading it out evenly with the back of a spoon to form a thin tortilla.
- Cook the tortilla for 3-4 minutes on each side, or until it is golden brown and cooked through.
- Remove the tortilla from the skillet and repeat the process with the remaining batter.
- Serve the sweet potato tortillas warm, with your mint chutney or as a wrap for other fillings.
