The Sizzling Vegan Tacos

Sizzling Vegan Tacos are a vibrant and flavorful meal featuring a medley of sautéed vegetables and protein-rich tofu or tempeh, all wrapped in warm tortillas. This dish is not only delicious but also offers a satisfying crunch and a burst of fresh flavors with every bite.

For a Serving Size of Two:

Ingredients:

  • 200 grams firm tofu or tempeh, diced
  • 100 grams bell peppers (mixed colors), sliced
  • 100 grams zucchini, sliced
  • 100 grams mushrooms, sliced
  • 1 small onion, sliced (50 grams)
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil or avocado oil
  • Salt and pepper to taste
  • 4 small corn or whole wheat tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving

Procedure:

  1. Heat oil in a skillet over medium-high heat. Add sliced onions and garlic, and sauté for 2-3 minutes until the onions are translucent.
  2. Add the diced tofu or tempeh to the pan. Cook for about 5-7 minutes until browned and crispy on all sides.
  3. Add the sliced bell peppers, zucchini, and mushrooms to the pan. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir well and cook for an additional 5-7 minutes, until the vegetables are tender and slightly charred.
  4. In a separate pan or microwave, warm the tortillas until soft and pliable.
  5. Spoon the sizzling vegetable and tofu mixture onto each tortilla.
  6. Garnish with fresh cilantro and serve with lime wedges for squeezing over the tacos.
