Tofu Fresh Spring Rolls

Tofu Fresh Spring Rolls are a light and refreshing dish, filled with crispy vegetables like carrots, cucumber, and bell peppers, alongside golden tofu, wrapped in delicate rice paper. Fresh herbs like mint and cilantro add an aromatic touch, making these rolls both flavorful and nutritious.
For a Serving Size of Two:
Ingredients:
- 100 grams firm, cut into strips tofu
- 4 rice paper sheets
- 50 grams julienned carrots
- 50 grams julienned cucumber
- 30 grams julienned red bell pepper
- 20 grams lettuce leaves
- 1 tablespoon fresh mint leaves
- 1 tablespoon fresh cilantro
- 1 teaspoon sesame oil
Procedure:
- Heat sesame oil in a pan and lightly sauté tofu strips until golden on all sides. Set aside.
- Prepare a shallow dish of warm water and dip each rice paper sheet in it for a few seconds to soften.
- Place the softened rice paper on a clean surface and layer the center with lettuce, carrots, cucumber, bell pepper, sautéed tofu, mint, and cilantro.
- Fold the sides of the rice paper over the filling and then roll it tightly into a spring roll.
- Repeat for the remaining rice paper sheets.
