Tomato Pulao

Tomato Pulao is a flavorful rice dish featuring tender basmati rice cooked with ripe tomatoes, aromatic spices, and green peas. This simple, mildly spiced pulao is perfect as a standalone meal or served alongside yogurt or raita.
For a Serving Size of Two:
Ingredients:
- 1 cup basmati rice, rinsed and soaked for 15 minutes
- 2 medium tomatoes (about 150 grams), chopped
- 1 small onion (about 50 grams), finely sliced
- 1/4 cup green peas, fresh or frozen
- 1-2 green chilies, slit
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon ginger-garlic paste
- Salt to taste
- 1 tablespoon oil or ghee
- 1 3/4 cups water
- Fresh coriander leaves for garnish
Procedure:
- Heat oil or ghee in a pot over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
- Add sliced onions and green chilies, sautéing until onions turn golden brown.
- Add ginger-garlic paste, cooking until the raw aroma disappears.
- Stir in chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and release oil.
- Add green peas and drained basmati rice, stirring gently to coat the rice with the tomato mixture.
- Pour in water, bring to a boil, then reduce heat, cover, and simmer until rice is cooked and water is absorbed (about 15-20 minutes).
- Fluff the rice with a fork, sprinkle with garam masala, and garnish with fresh coriander leaves before serving.
