Trio Berry Crisp is a delightful dessert that combines the natural sweetness and tang of mixed berries with a crunchy, nutty topping. This recipe starts with a luscious berry filling made from strawberries, blueberries, and raspberries, mixed with lemon juice, date paste, and vanilla extract to enhance their flavors. The crisp topping is a blend of rolled oats, almond flour, chopped nuts, and a touch of ground cinnamon, all bound together with a bit of coconut oil and date paste for a naturally sweetened crunch. - 150 grams mixed berries (strawberries, blueberries, raspberries, etc.)
- 1 tablespoon lemon juice
- 1 tablespoon date paste (made from blending dates with a little water)
- 1 teaspoon vanilla extract
For the Crisp Topping:
- 30 grams rolled oats
- 20 grams almond flour
- 20 grams chopped nuts (like almonds or walnuts)
- 1 teaspoon coconut oil
- 1 tablespoon date paste
- 1/2 teaspoon ground cinnamon
Procedure:
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the berries with lemon juice, date paste, and vanilla extract. Stir until the berries are well-coated. Transfer the berry mixture into a small baking dish or ramekins.
- In a separate bowl, combine rolled oats, almond flour, chopped nuts, ground cinnamon, and date paste.
- Melt the coconut oil and mix it into the dry ingredients until the mixture resembles coarse crumbs.
- Evenly sprinkle the crisp topping over the berry filling. Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the berry filling is bubbling.
