Vaghareli Roti

Vaghareli Roti is a flavorful Indian flatbread made with whole wheat flour and seasoned with spices, offering a delightful twist to regular rotis. The aromatic tadka enhances the taste and makes it an excellent accompaniment to various dishes.
For a Serving Size of Two:
Ingredients:
- 80 grams whole wheat flour
- 30 ml water
- 1 teaspoon oil
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon salt
- 1 tablespoon finely chopped coriander leaves
- 1 tablespoon yogurt
Procedure:
- In a mixing bowl, combine the whole wheat flour, salt, and optional yogurt. Gradually add water, kneading to form a soft dough. Cover and let it rest for 15-20 minutes.
- Heat a pan over medium heat and add oil. Once hot, add the cumin seeds and mustard seeds. Allow them to splutter.
- Add the turmeric powder and red chili powder, stirring quickly for about 30 seconds. Remove from heat and let the mixture cool slightly.
- Once the tadka has cooled, mix it with the rested dough, incorporating finely chopped coriander leaves if using. Knead gently to ensure even distribution.
- Divide the dough into equal portions (2). Dust each portion with a little flour and roll it out into a circle of about 6-7 inches in diameter.
- Heat a tawa (griddle) over medium-high heat. Place the rolled roti on the tawa and cook for about 1-2 minutes until small bubbles form.
- Flip the roti and cook the other side for another minute, pressing down gently with a spatula. Optionally, brush with a little oil or ghee for extra flavor.
- Remove from heat and serve hot with yogurt, pickle, or any curry of your choice..
