Vegetarian Sushi rolls with lettuce

Vegetarian Sushi Rolls with Lettuce are a fresh and healthy twist on traditional sushi, using crisp lettuce leaves instead of seaweed. Packed with colorful vegetables and seasoned rice, these rolls are easy to make and perfect for a light meal or snack

For a Serving Size of Two:

Ingredients:

  • 1 cup sushi rice (about 200 grams)
  • 1 1/4 cups water (about 300 ml)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar (optional, for seasoning)
  • 1/2 teaspoon salt
  • 4-6 large lettuce leaves (such as romaine or butter lettuce)
  • 1/2 medium cucumber (about 75 grams), julienned
  • 1 medium carrot (about 60 grams), julienned
  • 1/2 avocado (about 75 grams), sliced
  • 1/4 bell pepper (about 30 grams), julienned
  • Soy sauce or tamari for dipping
  • Sesame seeds for garnish (optional)

Procedure:

  • Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rice and water, bringing to a boil.
  • Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
  • In a small bowl, mix rice vinegar, sugar (if using), and salt until dissolved. Stir this mixture into the warm rice, fluffing it gently with a fork to combine.
  • Prepare your filling by cutting the cucumber, carrot, avocado, and bell pepper into thin strips.
  • Lay a lettuce leaf on a clean surface or sushi mat. Spoon a small amount of sushi rice onto the leaf, spreading it evenly but leaving some space at the edges.
  • Arrange the julienned vegetables on top of the rice. Roll the lettuce tightly, starting from one end and tucking in the filling as you go.
  • Repeat the process with the remaining ingredients. Once rolled, cut the sushi rolls into bite-sized pieces.
  • Serve the vegetarian sushi rolls with soy sauce or tamari for dipping, and sprinkle with sesame seeds if desired.
