Veggie Delight Quinoa

For a Serving Size of Two:
Ingredients:
- 60 grams quinoa (uncooked)
- 150 ml vegetable broth or water
- 100 grams finely chopped mixed vegetables (carrot, bell pepper, zucchini, and green beans)
- 30 grams finely chopped onion
- 2 cloves minced garlic
- 1/2 teaspoon cumin powder
- 1/2 teaspoon paprika
- 2 teaspoons olive oil
- Salt (to taste)
- 1 tablespoon lemon juice
- 1 tablespoon fresh coriander leaves, chopped
Procedure:
- Rinse the quinoa under cold water in a fine-mesh strainer to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit for a few minutes, then fluff with a fork.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the mixed vegetables to the skillet and cook for about 5-7 minutes until they are tender. Stir in the cumin powder, paprika, and salt, and cook for an additional 1-2 minutes.
- Add the cooked quinoa to the skillet with the sautéed vegetables. Mix well to combine. Drizzle with lemon juice if desired and stir again.
- Remove from heat and garnish with fresh coriander leaves. Serve warm.
