Walnut Cranberry Granola Bars

Walnut Cranberry Granola Bars are a delightful and nutritious snack, combining the crunch of walnuts with the tangy sweetness of dried cranberries. These bars are perfect for a quick energy boost and can be enjoyed on the go.
For a Serving Size of Two:
Ingredients:
- 30 grams oats
- 15 grams chopped nuts
- 15 grams dried cranberries
- 15 grams almond butter (or any nut butter, prefer homemade)
- 2 tablespoons mashed dates
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 2 teaspoons chia seeds
Procedure:
- Preheat your oven to 175°C (350°F). Line an 8×8 inch (20×20 cm) baking dish with parchment paper.
In a large mixing bowl, combine the oats, chopped walnuts, dried cranberries, and optional chia. - In a small saucepan over low heat, combine the almond butter, mashed dates, and vanilla extract. Stir until the mixture is smooth and well combined.
Pour the almond butter mixture over the oat mixture. Stir until everything is well coated. - Transfer the mixture to the prepared baking dish. Press down firmly with the back of a spoon or your hands to ensure it is evenly packed.
- Bake in the preheated oven for about 15-20 minutes, or until the edges are golden brown.
- Allow the granola bars to cool completely in the pan before lifting them out using the parchment paper. Once cooled, cut into bars or squares.
Store the granola bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
