Walnut Rice Pudding

This Walnut Rice Pudding is a creamy and comforting dessert that blends the nutty flavors of walnuts with the rich creaminess of milk. Naturally sweetened with dates, it provides a wholesome alternative to traditional rice pudding, making it a delightful treat for any time of the day.

For a Serving Size of Two:

Ingredients:

  • 100 grams cooked rice
  • 250 ml milk
  • 30 grams chopped walnuts
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon chopped dates
  • 1 tablespoon raisins
  • A pinch of salt

Procedure:

  • In a saucepan, combine the cooked rice, milk, chopped walnuts, cinnamon powder, vanilla extract, dates, raisins, and a pinch of salt.
  • Place the saucepan over medium heat and cook, stirring occasionally, until the mixture thickens to your desired consistency (about 10-15 minutes). If it becomes too thick, you can add a little more milk to reach your preferred creaminess.
  • Remove from heat and let it cool slightly. Serve warm or chilled, garnished with additional walnuts or a sprinkle of cinnamon on top if desired.
