Warm Vegetable Grain Salad

This Warm Vegetable Grain Salad is a nourishing and satisfying dish that combines hearty grains with vibrant vegetables. The medley of sautéed bell peppers, zucchini, and cherry tomatoes adds a burst of color and flavor, while the baby spinach provides a fresh and nutritious touch. Dressed with olive oil and balsamic vinegar, this salad is perfect for a cozy meal or as a side dish for any occasion. For a Serving Size of Two:
Ingredients:
- 120 grams cooked quinoa
- 100 grams diced bell peppers (mixed colors)
- 100 grams diced zucchini
- 100 grams halved cherry tomatoes
- 50 grams diced red onion
- 50 grams baby spinach
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
Procedure:
- In a skillet over medium heat, add olive oil. Once hot, add the diced red onion and sauté for 2-3 minutes until translucent. Add the diced zucchini and bell peppers, cooking for an additional 4-5 minutes until slightly tender.
- Stir in the halved cherry tomatoes and baby spinach, cooking for another 2-3 minutes until the spinach has wilted and the tomatoes are warmed through.
- In a large mixing bowl, combine the warm vegetable mixture with the cooked farro or quinoa. Drizzle with balsamic vinegar, and sprinkle with dried oregano, salt, and black pepper.
- Gently toss everything together until well combined. Serve warm as a hearty salad or side dish.
