Zesty Salmon with Spinach

For a Serving Size of Two:
Ingredients:
- 200 grams salmon fillet
- 200 grams fresh spinach leaves, washed and chopped
- 50 grams finely chopped onion
- 2 teaspoons minced garlic
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon olive oil
- Salt (to taste)
- 1 teaspoon black pepper
- 1 teaspoon red chili flakes
- Fresh parsley for garnish
Procedure:
- In a small bowl, mix together olive oil, lemon juice, lemon zest, salt, black pepper, and red chili flakes.
- Place the salmon fillets in a shallow dish and pour the marinade over them. Allow them to marinate for at least 15-20 minutes.
- In a large skillet, heat a little olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent (about 2-3 minutes).
- Add the chopped spinach to the skillet and sauté until wilted (about 3-4 minutes). Season with salt and pepper. Remove from the skillet and set aside.
- In the same skillet, add a bit more olive oil if needed and place the marinated salmon fillets skin-side down. Cook for about 4-5 minutes on each side or until the salmon is cooked through and flakes easily with a fork.
- On a plate, place a generous serving of sautéed spinach, top it with the zesty salmon, and garnish with fresh parsley if desired.
