Broccoli Coriander Loaf

Broccoli Coriander Loaf is a savory, wholesome bread combining earthy broccoli with fresh coriander in a soft, fluffy loaf. Perfect as a snack or side, this loaf is packed with flavors and nutrients

For a Serving Size of Two:

Ingredients:

  • 1 cup broccoli florets, finely chopped (about 100 grams)
  • 1/4 cup fresh coriander leaves, chopped
  • 1/2 cup whole wheat flour (about 60 grams)
  • 1/4 cup oat flour (about 30 grams)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cumin powder
  • Salt and pepper to taste
  • 1/4 cup yogurt
  • 1/4 cup milk (or water for a lighter version)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon sesame seeds (optional, for topping)

Procedure:

  • Preheat your oven to 180°C (350°F) and grease a small loaf pan or line it with parchment paper.
  • In a mixing bowl, combine whole wheat flour, oat flour, baking powder, baking soda, cumin powder, salt, and pepper.
  • Add the chopped broccoli and coriander leaves to the dry ingredients and mix well.
  • In a separate bowl, whisk together yogurt, milk, olive oil, and lemon juice.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Transfer the batter to the prepared loaf pan, smoothing the top. Sprinkle sesame seeds on top if using.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
