Baked Quinoa Chickpea Square Bites

Baked Quinoa Chickpea Square Bites are a flavorful and wholesome snack that combines the nutty taste of quinoa with the hearty texture of chickpeas. Seasoned with aromatic spices and fresh herbs, these bites are baked until golden and crispy, making them a nutritious alternative to traditional fried snacks.

For a Serving Size of Two:

Ingredients:

  • 30 grams quinoa
  • 60 grams cooked chickpeas
  • 50 grams finely chopped onion
  • 50 grams chopped bell pepper
  • 2 tablespoons finely chopped coriander leaves
  • 1 clove minced garlic
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1/2 tablespoon olive oil
  • 1 tablespoon whole wheat flour

Procedure:

  • Preheat your oven to 200°C (400°F).
  • Rinse the quinoa under cold water.
  • Cook it in a small saucepan with 1/2 cup water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Let it cool.
  • In a large bowl, combine the cooked quinoa, chickpeas, chopped onion, bell pepper, coriander and minced garlic. Add cumin powder, paprika, turmeric powder, and salt. Mix well.
  • Add olive oil and whole wheat flour to the mixture. Mix until well combined and the mixture holds together.
  • Take small portions of the mixture and press them into a square shape or any preferred shape.
    Place the shaped bites on a baking sheet lined with parchment paper or a non-stick baking mat.
  • Bake in the preheated oven for 15-20 minutes, or until the bites are golden brown and crispy on the edges.
  • Allow the quinoa chickpea square bites to cool slightly before serving. Enjoy them as a healthy snack or appetizer.
