Spiced Nutty Sweet Potato

Spiced Nutty Sweet Potato is a delightful dish that brings together the natural sweetness of roasted sweet potatoes with a warm blend of spices and a crunchy nutty topping. The sweet potato cubes are perfectly seasoned with cinnamon, cumin, and smoked paprika, which complement their inherent sweetness and add a savory depth of flavor. The addition of roasted almonds and walnuts not only provides a satisfying crunch but also enhances the dish’s overall nutritional value.
For a Serving Size of Two:
Ingredients:
- 200 grams peeled and cubed sweet potato
- 1 teaspoon olive oil
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- Salt to taste
- 20 grams chopped almonds
- 20 grams chopped walnuts
- 1 tablespoon fresh coriander
Procedure:
- Preheat your oven to 200°C (400°F).
- In a large bowl, toss the sweet potato cubes with olive oil, ground cinnamon, ground cumin, smoked paprika, black pepper, and salt until evenly coated.
- Spread the seasoned sweet potato cubes in a single layer on a baking sheet.
- Roast in the preheated oven for about 20-25 minutes, or until the sweet potatoes are tender and slightly crispy on the edges, turning halfway through.
- In the last 5 minutes of roasting, sprinkle the chopped almonds and walnuts over the sweet potatoes. Return to the oven and roast until the nuts are lightly toasted.
- Remove the sweet potatoes from the oven, and transfer them to a serving dish. Garnish with fresh coriander and serve warm.
