Salmon Sandwich

The Salmon Sandwich is a delicious and nutritious option, perfect for a quick meal or a packed lunch. Featuring flaked salmon mixed with creamy Greek yogurt, fresh herbs, and zesty lemon, this sandwich is not only flavorful but also rich in protein and healthy fats.

For a Serving Size of Two:

Ingredients:

  • 120 grams cooked salmon
  • 60 grams  Greek yogurt
  • 1 tablespoon chopped dill or parsley
  • 1 tablespoon lemon juice
  • 2 whole-grain bread slices
  • 50 grams thinly sliced cucumber
  • 50 grams thinly sliced tomato
  • Salt and pepper to taste

Procedure:

  • In a bowl, mix the flaked salmon, Greek yogurt, chopped dill, lemon juice, salt, and pepper until well combined.
  • Spread the salmon mixture evenly on one slice of bread.
  • Layer with cucumber and tomato slices.
  • Top with the second slice of bread.
  • Cut the sandwich in half and serve immediately, or wrap it for a packed lunch.
