4 Recipes to keep you warm when the Temperature is dripping

During these chilly winter days, all you want to do is hide under a blanket until the sun sets again. You could hibernate and survive on takeout for the next few months, or you could master these cold-weather recipes that will defrost your heart and stomach and help to keep your body warm and cosy!
- Kale and chickpea soup: What’s a chilly winter day without a bowl of belly-warming soup? This vegetarian option packs in filling protein and fibre without all the calories, and thanks to the twist of lemon, it’s got immune-boosting vitamin C, too. Cook and stir garlic in the stockpot until lightly browned and add onion and about 2 tablespoons vegetable broth to garlic. Add kale into the onion mixture and cook until slightly wilted. Add chickpeas, remaining vegetable broth, and curry powder and bring to a boil. Add almond milk and cook until heated. Your delicious soup is ready to be served!
- Apple oatmeal muffins: Try these oh so lovely winter delights! Oats and apples offer a boost in fibre while seasonal add-ins like nutmeg, cinnamon, honey, and vanilla give these perfectly portioned muffins rich flavour. Pulse oats in a food processor until it looks very fine. Whisk in nutmeg powder, cinnamon, salt, and baking powder. Stir in half of the pecans. In a bowl, whisk together oil and honey, then whisk in eggs, vanilla, and almond milk too. Add wet ingredients to dry ones and mix to combine, and then fold in apples and remaining oats. Bake for 20 to 25 minutes until golden brown on the top in an already preheated oven.
- Spinach tomato frittata: This low-calorie recipe is also ideal for chilly weekend mornings and is loaded with protein. Heat onion in a pan and transfer them to a large bowl. Add spinach, whole eggs, and egg whites. Beat with a fork until well blended. Heat broiler. Pour in egg mixture and scatter tomatoes on the top of it. Cover the skillet and cook until eggs are set around the edges. Top with cheese and serve this delicious frittata
