This vibrant Guacamole Salad combines all the classic flavors of guacamole in a refreshing and colorful salad. For a Serving Size of Two:
Ingredients:
- 200 grams diced avocado
- 100 grams diced cucumber
- 80 grams diced cherry tomatoes
- 50 grams finely chopped red onion
- 40 grams chopped fresh cilantro
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lime juice
- 1 teaspoon finely minced garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small green chili, finely chopped (optional, for heat)
Procedure:
- In a large mixing bowl, combine the diced avocado, cucumber, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, minced garlic, cumin, salt, and pepper. If you like spice, add the chopped green chili.
- Pour the dressing over the avocado mixture and gently toss to coat all ingredients evenly.
- Serve immediately for a fresh taste or chill for 15-20 minutes before serving.
