Apple Cake

Apple Cake is a wholesome and delightful treat that combines the natural sweetness of apples with the warmth of cinnamon and nutmeg. Made with whole wheat flour and applesauce, this cake is a healthier alternative to traditional cakes, offering a moist and flavorful experience. The inclusion of walnuts or almonds adds a crunchy texture and nutty flavor, making each bite satisfying.

Ingredients:

For the Cake:

    • 200 grams whole wheat flour
    • 2 medium peeled, cored, and finely chopped apples
    • 1/2 cup unsweetened applesauce
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon salt
    • 1 tablespoon coconut oil
    • 1/4 cup chopped walnuts or almonds

For the Applesauce:

    • 2 medium apples, peeled, cored, and chopped
    • 1/2 cup water

Procedure:

  • In a saucepan, combine the chopped apples and water. Bring to a boil over medium heat. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the apples are very soft.
  • Mash the apples with a fork or blend them using an immersion blender until smooth. Let it cool before using.
  • Preheat your oven to 180°C (350°F) and grease a baking pan (8-inch round or square pan) or line it with parchment paper.
  • In a large mixing bowl, combine the whole wheat flour, ground cinnamon, ground nutmeg, and salt.
  • In another bowl, mix the chopped apples, applesauce, and coconut oil until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the chopped nuts if using.
  • Pour the batter into the prepared baking pan and spread it evenly.
    Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
    Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
