Pineapple Sorbet

Pineapple Sorbet is a refreshing and tropical dessert that combines the tangy sweetness of fresh pineapple with a hint of lemon and ginger. The addition of coconut water and banana creates a smooth, creamy texture, making this sorbet a perfect cooling treat. With no added sugar, this sorbet is naturally sweetened by the fruit, making it a guilt-free dessert option that’s both delicious and hydrating.
For a Serving Size of Two:
Ingredients:
- 300 grams chopped fresh pineapple
- 1 tablespoon lemon juice
- 1/4 teaspoon freshly grated ginger
- 30 ml coconut water
- 1-2 tablespoons ripe banana
Procedure:
- Peel and core the pineapple, then chop it into small pieces. Place the chopped pineapple in a single layer on a baking sheet and freeze for 2-3 hours or until fully frozen.
- In a blender or food processor, add the frozen pineapple chunks, lemon juice, grated ginger, coconut water, and ripe banana.
- Blend the mixture on high until smooth and creamy. You may need to stop and scrape down the sides a few times to ensure everything is well combined.
- If the sorbet is too thick, add a little more coconut water to reach your desired consistency.
- Scoop the sorbet into bowls and serve immediately for a soft-serve texture. If you prefer a firmer sorbet, transfer it to a container and freeze for an additional 1-2 hours before serving.
