Herby Omelette with Smashed Tomatoes

Procedure:

  1. Heat olive oil in a small pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the halved cherry tomatoes, dried basil, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the tomatoes are soft and slightly caramelized. Set aside.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Stir in the chopped parsley and chives. Heat olive oil in a non-stick pan over medium heat.
  5. Pour the egg mixture into the pan and cook for 1-2 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
  6. Cook until the omelette is mostly set but still slightly runny on top.
  7. Fold the omelette in half and cook for another 1-2 minutes, or until fully set.
