Papaya Salad Rolls

Papaya Salad Rolls are a refreshing and vibrant dish that’s perfect for a light appetizer or snack. These rolls feature crisp, julienned vegetables and fresh herbs wrapped in delicate rice paper, creating a satisfying and healthy bite. Paired with a tangy dipping sauce made with rice vinegar, lime juice, sesame oil, garlic, ginger, and toasted sesame seeds, these rolls are as delicious as they are nutritious.

Ingredients:
For the Rolls:
- 150 grams peeled, seeded, and julienned papaya(about 150 grams)
- 100 grams peeled and julienned carrots
- 100 grams peeled and julienned cucumber
- 50 grams julienned red bell pepper
- 1 small handful of fresh mint leaves
- 1 small handful of fresh cilantro leaves
- 8-10 rice paper wrappers
For the Dipping Sauce:
- 2 tablespoons vinegar
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1 small minced garlic clove
- 1 teaspoon grated ginger
- 1 teaspoon toasted sesame seeds
Procedure:
- Fill a shallow dish or large plate with warm water.
- Dip one rice paper wrapper into the water for about 5-10 seconds until it becomes pliable but not too soft. Lay the softened wrapper flat on a clean surface.
- Place a small amount of papaya, carrot, cucumber, red bell pepper, mint leaves, and cilantro in the center of the rice paper wrapper.
- Fold the sides of the wrapper over the filling, then roll from the bottom up to form a tight roll.
- Repeat with the remaining rice paper wrappers and filling.
- In a small bowl, whisk together the rice vinegar, lime juice, sesame oil, minced garlic, grated ginger, and toasted sesame seeds.
- Arrange the papaya salad rolls on a serving platter. Serve with the dipping sauce on the side.
