Pineapple Fried Rice

Pineapple fried rice is a simple yet delicious dish which made with the goodness of pineapple, vegetables and rice. It is a perfect dish to be tried upon and relish the bundles of nutrition along with amazing taste.
Nutritional Benefits
Rice serves as the instant source of energy. Pineapples are good source vitamin C and antioxidants which help in building up of immunity. Tomatoes are great source of antioxidant lycopene which reduces the risk of cancer and heart diseases. It is also rich in vitamin C, potassium and Folate.
Ingredients:
- 20 grams cooked rice
- 3-4 Garlic cloves
- 3-4 sprigs of curry leaves
- 20 grams onion
- ½ teaspoon lemon juice
- 20 grams pineapple
- 1inch cinnamon stick
- 20 grams tomatoes
- 2-3 green chillies
- 1 teaspoon black pepper
- ¼ teaspoon turmeric powder
- 1/2 teaspoon mustard seeds
- 10 grams green peas
- 10 grams curd
- Salt as per taste
- 1 teaspoon olive oil
- 3-4 sprigs mint leaves

Method:
- Combine the rice and lemon juice together. Mix well and keep it aside.
- Heat oil and add mustard seeds, onion, tomato, green chillies, curry leaves, cinnamon and curd. Stir well.
- Add 1 cup water and allow it boil for some time. Now add Pineapple cubes and peas and cook it for few minutes.
- Add rice and mix well. Garnish with fresh mint leaves.
- Serve hot.
